  2. Prepare 200 g mixed nuts
  3. Prepare 2 onions, finely diced
  4. Prepare 2 garlic cloves, crushed
  5. Take 50 g raisins
  6. Take 50 g pine nuts
  7. Make ready 1/2 tsp white pepper
  8. Take 1/2 tsp salt
  9. Make ready 1 tsp turmeric
  10. Make ready 1 tsp smoked paprika
  11. Prepare 3 tbsp cranberry sauce
Instructions to make Cranberry Sauce Topped Nut & Lentil Roast:
  1. Boil the lentils in plenty of boiling water for 15 mins then drain.
  2. Blitz the nuts in a food processor until roughly ground. Add to a bowl with the raisins, pine nuts and spices. Mix well.
  3. Finely chop the onions and crush the garlic. Fry in a frying pan with a tbsp of oil from the sun dried tomatoes jar.
  4. After 5 mins, add the sun dried tomatoes and continue to fry for a few mins.
  5. Add in the dry mix and stir well to coat the nuts in the oil and tomatoes. Stir in the cooked, drained lentils and mix well. Remove from the heat.
  6. Line a loaf tin with parchment paper. Spread the cranberry sauce on the bottom of the tin.
  7. Spoon your nut mixture into the tin, pressing down with the spoon and then your hands to fit the mix in and make sure there are no gaps. Cover with foil and bake at 190 C for 50 mins.
