  1. Chop the vegetables, nice and small, leave some coriander aside for the end….

  3. Add all the spices, salt and pepper and stir often cooking at low flame for 5 minutes
  4. Add the lentils, stir and add boiling water generously a couple centimetres over the lentils.
  5. Place the lid on and turn to high flame until valve pops, then reduce the flame and cook it 15mins. (if cooking in a tradicional pan cook it for 1hr instead)
  6. In the meantime prepare the Chilean sauce “ají de color” (it’s not chilli!) add some olive oil, paprika, salt & pepper into a small teflon pan and cook for a couple of minutes, stirring often and leave it aside
  7. Serve immediately, add fresh coriander and my Chilean sauce “ajĂ­ de color”… enjoy! Buen provecho!
