Inspired by the pad thai at Thai Tom, this recipe features a tamarind paste, vinegar, sugar, and fish sauce mixture over perfectly stir-fried eggs, chicken breast, and rice noodles, garnished with peanuts, chives, and fresh bean sprouts. The ingredients needed to make Authentic Pad Thai:
  1. Get Sauce:
  2. Prepare 6 Tbsp light brown sugar,
  3. Take 6 Tbsp tamarind paste or rice vinegar,
  4. Get 4 Tbsp fish sauce or Thai Taste - Vegan 'Fish' Sauce
  5. Prepare 2 Tsp dark soy sauce
  6. Prepare Pad Thai:
  7. Make ready Instant rice noodles (Mama brand)
  8. Take 400 g king prawns / sliced mushrooms,
  9. Make ready 2 tsp Thai red chilli flakes or normal chilli flakes (use less for mild),
  10. Take 2 spring onions roughly chopped,
  11. Make ready 1 English shallot, sliced,
  12. Prepare 2 eggs whisked (you can omit this to make it vegan),
  13. Take 1 Tbsp oil (we recommend peanut oil),
  14. Get Handful beansprouts,
  15. Take 2-3 garlic cloves, crushed,
  16. Take Tofu:
  17. Take 4-6 tbsp crushed peanuts,
  18. Make ready 1 block tofu drained, pressed and cut into 1 inch cubes,
  19. Prepare 1 lime, juiced
  20. Take Freshly cracked black pepper,
  21. Get 1/3 cup cornflour
  22. Prepare Garnish Examples: Handful of chopped coriander,1 spring onion chopped, lime wedges

This Pad Thai post is completely rewritten based on my previous wok two years ago, with an upgraded recipe and the inclusion of the video demonstration. I have added more information as below: The authentic formula of the Pad Thai sauce; The key ingredients and the explanation how to prep these items. Authentic Pad Thai noodles are made with tamarind. Tamarind is prepared by extracting the juice from tamarind pulps, which comes in a block in a clear plastic packaging.

Instructions to make Authentic Pad Thai:
  1. Soak noodles in boiling water for 10 minutes until soft, drain the water.
  2. Make pad thai sauce by placing ingredients in a small saucpan over a low/medium heat. Once the sauce thickens, add 1 tbsp of water, mix and set aside.
  3. In a seperate bowl, add the cornflour and black pepper and mix, add the tofu until pieces are coated.
  4. In a wok on a medium heat, add 1 Tbsp oil, garlic, chilli flakes and prawns (or mushrooms), spring onions, shallot and tofu. Cook for 4 minutes or until tofu is slightly browned on all sides. Set aside on a seperate plate.
  5. Add 1 Tbsp oil in the wok, add whisked eggs and mix until cooked/resembles scrambled eggs (if you are vegan go to step 6)
  6. Add drained noodles, beansprouts and sauce and toss until egg and sauce coats the noodles,
  7. After 5 minutes add prawns/mushrooms/tofu mixture, 2-3 Tbsp of crushed peanuts and lime juice, toss for a final time
  8. Serve immediately and garnish.

You can also buy tamarind concentrate which can be diluted with water. This classic pad Thai is an authentic and satisfying one-bowl noodle dish that's made with rice noodles, tamarind, dried shrimp, pork, tofu, bean sprouts, scallions, radish, cilantro, and peanuts. Pad Thai is the ultimate street food. While "street food" may sound bad, food cart cooks are in such a competitive situation, with such limited space, ingredients and tools they need to specialize in a dish or two just to stay in. Authentic Pad Thai on the streets of Thailand has a distinct fishy/prawny "funk" (which sounds thoroughly unappetising but is actually completely addictive and the very essence of true Thai street food).
