Used three long thin red peppers rather than the red and green recommended, sliced them to look like squid rings which was visually very appealing. We put in a chopped chilli as well which gave it some lovely heat. We used a paella dish with no lid so had to stir it and cook for a bit longer than stated but still worked really well. Add the onion, garlic, paprika, cayenne and saffron and season with salt.

  1. In a non-stick pan heat the oil and gently fry the chopped onion and shallot until translucent. Add finely chopped carrot and celery (soffrito) and chopped garlic and stir for a couple of minutes until just starting to brown.   2. Add the paella rice along the middle of the pan to sit just above the fluid level. Simmer until the rice is almost cooked.
