It's really nice if you mix a packet of sage and onion stuffing in with the sausage meat and then cook. I usually add some fresh sage, pepper & finely diced onion to some sausage meat if that helps. Oooh I'm supposed to be working but had to share my stuffing recipe (well my mums) good for those who dont like sausagemeat. - finely chop (or food processor ) a large onion - add breadcrumbs (I food processor a few slices of bread) - loades of dried mixed herbs (a full sachet or desertspoon at least) - salt and pepper mix it up and drizzle with olive oil and bake on a tray for half an hour.

The sausage meat not only adds flavour but also moisture. So many stuffing balls you see look so dry and like you'd need a litre of gravy to be able to eat them. Soften two of the packs of stuffing in boiling water. Mix the wet stuffing, dry stuffing, sausagemeat, bacon, mustard, horseradish and cranberry sauce really well in a very large bowl.

Steps to make Mum's Sausage Stuffing:
  1. Brown the sausage. Do not drain unless very greasy.
  2. Dice the celery and onions. Cook in 1 stick of butter until vegetables are almost soft. Add the cooked sausage to the pan.
  3. Pour 1 large can of broth into the pan of cooked celery/onions/sausage. Simmer for about 10 mins.
  4. Empty the boxes of stuffing mix into a large bowl. Laddle the broth mixture over stuffing mix until moist but not too moist. Add a tablespoon of Bell's Poultry Seasoning and mix into the stuffing.
  5. If stuffing a turkey: Make sure the turkey is rinsed and dried. Do not stuff until right before cooking. Stuff the turkey and put the rest of the stuffing into a buttered casserole dish and cover.
  6. Bake at 180°C for 30 minutes.

Place in a large oven dish, dot with knobs of butter and wrap well in foil. Tip Add the sausage meat to the Paxo mix and combine well. It is now ready for use. Transfer sausage and veggies, including any butter that is left in the pan to a bowl. Add stuffing mix, bread cubes, sage, thyme, poultry seasoning, salt, pepper, pecans, turkey stock, and eggs.
