Instructions to make My Granola (Oven-baked Muesli):
  1. Preheat the oven to 160°C.
  2. Melt Coconut Oil and mash the ripe Bananas very well. The sweetness comes from the Bananas, but you may wish to add 1 to 2 tablespoons Honey for extra sweetness.
  3. Combine Oil, Bananas (and Honey), then add Rolled Oats and mix well.
  4. Turn out the mixture onto a baking tray and bake for about 40 to 50 minutes or until the mixture is light brown and toasty. *Important: You need to stir and turn the mixture several times for even colour and to make sure the mixture is cooking evenly.
  5. Roughly chop the nuts and dried fruit if they are large.
  6. Remove the mixture from the oven and add the other ingredients, and mix evenly.
  7. Let cool before enjoying. It is so nice with unsweetened fresh yoghurt and fruit.

This can easily over-brown (burn), so keep an eye on it. Make your own granola at home. in the oven or the microwave. Yes, you can make it in the microwave!. It's spring break week for me, and hubby took three days off too so we could do stuff together. Here was my idea of what to do with our days off. Homemade granola's one drawback is that despite its straightforward preparation, it is not typically done quickly.
