- Put the sardines on a plate and lightly season with salt and pepper. (Season evenly inside the sardines as well.)
- Combine the minced tomato, onion, garlic, salt, and pepper in a baking dish and mix.
- Stuff the sardines with the vegetables. Line the bottom of the dish with a layer of vegetables, then place the sardines on top (as shown in the photo).
- Top with cheese, then panko, then evenly drizzle the olive oil over the panko.
- Bake in an oven (no need to preheat) set to 250℃ for 20 minutes and it's done!
