This is a typical Maharashtrian style khichdi I learned from our kaki (maid), she makes awesome khichdi!! To make the Maharashtrian style Sabudana Khichdi, wash the sabudana under running water or in a bowl full of water twice or thrice ( until the water runs clean). It is very important to get rid off all the starch. Drain the sabudana using a colander or strainer.

Steps to make Sabudana Khichdi (Maharashtrian Style):
  1. Wash Sabudana nicely and then soak it in water for 2 hours. You will have to check the quality of Sabudana because some take 1-2 hours soaking time and some take overnight.
  2. After soaking, try mashing it between fingers. If you feel lump while mashing then it needs more soaking.
  3. Once they are properly soaked, spread them in a plate and let them dry. It will take around 2-3 hours if kept under fan covered with sieve lid.
  4. Now take a non-stick pan. Heat ghee or coconut oil.
  5. Splutter mustard seeds. Now add curry leaves and slit green chillies. Saute for 30 seconds.
  6. Now add sabudana and lightly toss.
  7. Add powdered sugar, very little salt and crushed peanuts. Toss lightly at low medium flame.
  8. Cover and cook for a minute at low flame. Add lemon juice and serve hot.
