Grind Maria's cookies in blender or food processor. (Or place cookies in large plastic bag and crush with rolling pin.) Stir in butter until well combined. Cut cream cheese and put into gelatin. With an electric mixer on very low mix for a minute or so then turn on medium for another minute or so until it's light and fluffy. Pour into pie crust and refrigerate until set.

  1. Mix all the pasrty ingredients together and knead, adding more flour if necessary, to get a soft, pliable dough.
  2. Cover the bowl and let the dough rest in the fridge for 30 minutes.
  3. Divide the dough into 2 balls.  The piece meant for the base of the pie should be bigger.
  4. Roll out both pieces.  Oil an ovenproof dish, and cover its base and sides with the larger piece of pastry.
  5. Combine all the filling ingredients, and pour evenly onto the pastry in the pie dish.
  6. Cover with the remaining pastry sheet.  Roll the edges neatly.
  7. Score the surface of the pie into portions.
  8. Brush generously with olive oil, and sprinkle with cold water.
  9. If desired, you can sprinkle the surface with sesame seeds.
  10. Bake in a preheated oven, 200 degrees, on the first shelf, till golden brown.
