This summer, I created a new version with Thai dressing, that has a nice flavour with citrus juice. The salad is so refreshing and definitely another summer favourite for us. Harusame Salad is a salad with dried bean (or potato) threads called Harusame and vegetables. This cold and smooth textured noodle dish is a great side dish any time, but especially good during hot summer days.
Instructions to make Harusame Salad with Thai Dressing:
- Combine all the dressing ingredients in a small bowl.
- Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5-10cm.
- Cook Pork and Prawns in a frying pan. No seasoning is required. *Note: They can be boiled with Harusame Noodles if you like.
- Place everything into a large mixing bowl, add the dressing and mix to combine well. Sprinkle with finely chopped Spring Onions and serve immediately.
The dressing is flavored with sesame oil and it tastes like a Chinese style salad. Harusame thread is used all over the Asian countries. I made a typical Harusame Salad with minimal ingredients today - vermicelli, carrot, cucumber, ham and rehydrated chopped wakame seaweed. The vegetables and ham are all julienned. If your wakame seaweed comes in a long strand, cut it into small pieces.
