  1. In a large pot, add sesame oil and ginger in cook for another 10 mins.
  2. In another bowl, marinate chicken with soya sauce.
  3. Add garlic and white part of spring onion into the pot cook for about 2 mins.
  4. Reduce the heat and move the ingredients in the wok to the side. add chicken in.
  5. Leave the chicken and do not move them too much, let them settle and cook for about 3 mins. Flip them to cook on both sides.
  6. Increase the heat and mix all ingredients together.
  7. Add 2 tbsp soya sauce and chilies paste (optional).
  8. Add 2 tbsp of shaoxing wine and 1 tbsp sugar.
  9. Add half cup of water in.
  10. Do not cover the lid and cook for 15 mins for the water to evaporate.
  11. Add green spring onion, cut chillies, and basil leaves in.
  12. Serve.
