- Add the vegetables to the noodles in the boiling water in order of cooking time (use your experience… Celery takes longer than bean sprouts for example)
- Drain noodles and vegetables and toss with some vegetable oil and sesame oil to prevent sticking
- Divide into for bowls and drizzle the sauce over the noodles
- Let each guest mix well before eating. Serve with chilli oil, soy sauce and vinegar to taste
In China, noodles are served as breakfast or sometimes along with a meal with congee. The most famous and popular cold noodle in China is Sichuan style mala noodles. In that version, only a small amount of sesame paste is added, just for flavoring, no influence on the texture. Bring a pot of lightly salted water to boil. Drain, and transfer to a serving bowl.
