Steps to make Salt fish frittas:
  1. Boil salt fish till cooked
  2. Shred salt fish very finely and place in a bowl
  3. Add the chopped red peppers, scotch bonnet, spring and white onion, corn and garlic to the shredded salt fish and mix together
  4. In a separate bowl pour in some self raising flour, salt and pepper.
  5. Add a little water to the bowl of flour and stir until u have a liquid consistency like a batter (not too watery it should)
  6. Add all the salt fish mixture to the batter mixture and stir till all ingredients sre coated.
  7. heat the frying pan with vegetable oil.
  8. pour 1 spoon of the mixture into the frying pan. Once the fritta is fried on both sides remove from the pan an taste it. If more salt, pepper or scotvh bonnet needs adding to the mixture then do so to your liking.
  9. Spoon portions of the mixture into the frying plan. you will need to watch the portions as they fry and turn them over ensuring they do not burn.
  10. once fried, place the fritter onto a tray with paper towel to soak some off the oil. repeat the steps of spooning the batter into the frying pan until all the batter mixture is finished.
