- Close lid or cover with cloth/ rubber band and leave to ferment for 24 to 48 hours in a warm, dark place. The warmer the environment the faster the process. Once fermented you will notice a change in smell and taste. It may not be fizzy yet, leaving it out for secondry fermentation will help add fizz.
- After fermentation remove any added ingredients and strain the kefir to speparate the grains.
- Pour the water Kefir grains into airtight bottles and add any additional flavouring and lave in a dark place for a further 24-72 hours for the second fermentation which will produce carbonation. Replace fruit with fresh every 24 hours until you get the desired carbonation. When ready, add ice and serve.
