Take 1/3 approx of the raspberries to make the sauce, crush with a fork and add most of the whiskey and the honey, you may need to warm the honey in the microwave, stir and the sauce is done.
  2. Whip the cream to soft peak (not so stiff that you cannot mix in other ingredients) then stir in the sauce, most of the oats, I tasted and wanted more whiskey so this is the time to do that. If you want more honey etc just trust your pallet.
  3. Select the vessel that you want to serve in, I've gone for a tumbler here, build layers of raspberries, cream mix and add more honey and oats in the layers. Keep your best looking raspberries for the top.
  4. I've topped with oats then dusted with icing sugar and a sprig of mint, don't make these too far in advance as the oats will lose their integrity and go mushy. These images are taken from my youtube channel feel free to watch the videohttps://www.youtube.com/watch?v=SML5dHxoWBM&t=1s
