Okonomiyaki (literally means 'grilled as you like it') is a savory version of Japanese pancake, made with flour, eggs, shredded cabbage, meat/ protein and topped with a variety of condiments. Okonomiyaki o-konomi-yaki is a Japanese savory pancake containing a variety of ingredients. The name is derived from the word okonomi.

The ingredients needed to make Okonomiyaki:
  1. Get 1/2 cup All-purpose flour
  2. Prepare 1/8 tsp Kosher salt
  3. Make ready 1/8 tsp Granulated sugar
  4. Make ready 1/8 tsp Baking powder
  5. Prepare 1 inch Nagaimo
  6. Get 90 ml Dashi
  7. Take 400 g/ half Large cabbage head
  8. Take 4 Sliced pork belly (other ingredients such as shrimps and squids can be used as well)
  9. Make ready 2 Eggs
  10. Prepare 3 tbsp Tempura scraps
  11. Get 4 tbsp Pickled red ginger
  12. Take 4 tbsp Green onion/ scallions
  13. Prepare Oil

Okonomiyaki - お好み焼き - is a savory Japanese pancake made with a light but substantial batter You see, okonomiyaki has a tradition of being topped with okonomi sauce, Japanese mayonnaise. Okonomiyaki is a cabbage pancake covered with Okonomiyaki sauce. Okonomiyaki is found anywhere in Japan, but is big in the Osaka area in western Japan where we are (proudly) from.

Steps to make Okonomiyaki:
  1. Okonomiyaki batter: - Combine the all-purpose flour, salt, sugar and baking powder in a large bowl and mix all together.
  2. Peel and grate nagaimo in a small bowl. Add the grated nagaimo and dashi in the bowl.
  3. Mix all together till combined.
  4. To cook: - Remove the core of the cabbage and mince it. Set aside to let the moisture evaporate to avoid dilute the batter.
  5. Halve the pork belly slices and set aside.
  6. Add the eggs, tempura scraps, green onions and pickled red ginger in the batter. Mix well until well-combined.
  7. Add the minced cabbage into the batter.
  8. Heat oil in a large pan on medium heat. Spread half of the batter in a circle on the pan. The optimum thickness of the okonomiyaki is 2 cm. Thicker okonomiyaki tastes better.
  9. Place 3-4 sliced pork belly on top of Okonomiyaki and cook covered for 5 minutes.
  10. When the bottom is set and browned, flip over. - Gently press the okonomiyaki to re-shape and keep it together. Cover and cook for another 5 minutes.
  11. Flip over one last time and cook uncovered for 2 minutes. Transfer to a plate and apply the toppings.
  12. Apply okonomiyaki sauce with brush, then add Japanese mayonnaise. At last, prinkle dried bonito flakes (katsuobushi) and dried green seaweed (aonori). Enjoy.
