Iniziate tagliando le melanzane a dadini. Portate a bollore una pentola con abbondante acqua e tuffatevi le melanzane. Scolatele, fatele intiepidire e strizzatele per eliminare tutta. - Lightly cook the fish, either steam, pan fry or cheat like I did and microwave for about 2 minutes. Leave to cool. When cooled, add veg in a bowl
- Flake the fish and add to the bowl, checking for bones. Add parsley, an egg and a tablespoon of breadcrumbs. Add a pinch of salt and mix well.
- Prepare the other egg and more breadcrumbs. Divide mixture into 8 equal pieces, roll in the egg and then the breadcrumbs. If you want them extra crispy, do this again. Leave in the fridge for at least an hour. Then heat frying oil in a large pan. Deep fry for about 6-8 mins until golden brown. Serve with lemon, salad, bread or however you fancy!
