Rava kesari, a semolina pudding is made with ingredients that are always available in the Indian pantry. A two ingredient fix that requires very less time. In India, Rava kesari or Indian semolina pudding is very popular Indian halwa or sweet which serves in special days. Rava Kesari is a typical south Indian sweet dish made with semolina also commonly known as Bombay rava or sooji.

Steps to make Kesari (rava/suji/semolina):
  1. Heat 2 tbsp ghee / clarified butter and roast 10 cashews, 1 tbsp raisins on low flame. once the cashews turn golden brown, keep aside.
  2. Now in the same ghee roast ½ cup rava/semolina. use fine / coarse variety rava. - - roast on low flame for 5 minutes or till it turns aromatic. keep aside.
  3. In a large kadai boil 1 cup water. - - keeping the flame on low, add in ½ cup roasted bombay rava. - - stir continuously till the rava absorbs water and no lumps are formed.
  4. Add 1 cup of sugar (depending on sweetness you prefer). - - keep the flame on low, stir well till the sugar dissolves. - - furthermore add 2 tsp kesari food colour.
  5. Also and ¼ cup ghee and stir continuously. - - make sure the mixture is combined well and no lumps are present. - - cover and simmer for 2 minutes or till rava gets cooked well completely.
  6. Additionally add roasted cashews, raisins and ¼ tsp cardamom power. - - mix well till the rava kesari separates from pan. - - finally, serve rava kesari / kesari bath as a dessert.

When sugar dissolves add rava while stirring to avoid lumps and cook till its almost dry. Grease a baking pan or a plate and pour this mixture on it. Suji halwa is also known as rava sheera in western India And Rava Kesari in South India. the method of preparation is more or less similar, with a few ingredients being changed here and there. Though rava or semolina remains the key ingredient. In some variations, milk is added instead of water.
